You can find artichokes in most supermarkets year round, but they’re at their best March through May. Look for artichokes that feel heavy for their size and make a bit of a “squeak” when squeezed. The leaves should be tightly packed and a green or purple color — avoid artichokes that are brown at the tips or whose leaves are split, soft or spongy. Canned or jarred artichokes work well in recipes where the choke isn’t the star ingredient, like dips, salads and pastas
